Here are a few trout recipes that you may enjoy.


Smoked trout holiday dip
  • Carefully bone a one pound Allen Creek smoked trout
  • Finely chop one medium onion; add to trout.
  • Add eight ounces softened cream cheese.
  • Blend with fork untill smooth and creamy.
  • Season to taste with tabasco sauce.
  • Serve on crackers.


    Rainbow trout on the grill
  • Rinse trout under cold water and
    stuff with lemon wedges and onions
  • Wrap in foil and cook on hot coals or gas grill
    for six minutes on each side.
  • Do not overcook.
  • Open foil and remove skin and bones.
  • Squeeze on fresh lemon; salt and pepper to taste.


    Allen Creek smoked trout salad
  • 6 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 6 cups Harmony Valley greens
  • 1 LB. Allen Creek smoked trout
  • 1/2 small red onion; thinly sliced
  • 16 cherry tomatoes
    Wisk oil and vinegar in small bowl to blend well. Season with salt and pepper. Place greens and smoked trout in a large bowl. Toss with enough dressing to coat lightly. Divide among four plates and garnish with cherry tomatoes and red onions. Drizzle more dressing on salad.
